Tasty, Filling, and so Easy to make! One of my favorite to-go healthy lunch recipes!

Also, it will be a great addition to your dinner.

Impress your guests by the creative way you use goat cheese!

  • 3 handful of greens (spinach, arugula, chard, etc)
  • 1 bell pepper, sliced into 1 in pieces
  • 1 pint cherry tomatoes, cut in half
  • 4 oz goat cheese
  • 1 tbsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt to taste
  • 1 tbsp avocado oil for searing

Preheat a medium pan with avocado oil. Sear peppers till they become semi-tender. Salt and set aside.

Divide goat cheese into chunks and form small balls. One ball should equal about a teaspoon of goat cheese. Don't make them too big because they will overpower other ingredients. Coat the cheese balls in black pepper and set aside.

Place greens in a large bowl. Add tomatoes, parsley, peppers, olive oil, some salt, and balsamic vinegar. Toss well with your hands. Adjust seasoning and transfer into a serving bowl.

Top with seasoned goat cheese and enjoy!
