and Seasoned Goat Cheese Salad

Impress your guests by the creative way you use goat cheese!
- 3 handful of greens (spinach, arugula, chard, etc)
- 1 bell pepper, sliced into 1 in pieces
- 1 pint cherry tomatoes, cut in half
- 4 oz goat cheese
- 1 tbsp black pepper
- 2 tbsp fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt to taste
- 1 tbsp avocado oil for searing
Preheat a medium pan with avocado oil. Sear peppers till they become semi-tender. Salt and set aside.
Divide goat cheese into chunks and form small balls. One ball should equal about a teaspoon of goat cheese. Don't make them too big because they will overpower other ingredients. Coat the cheese balls in black pepper and set aside.
Place greens in a large bowl. Add tomatoes, parsley, peppers, olive oil, some salt, and balsamic vinegar. Toss well with your hands. Adjust seasoning and transfer into a serving bowl.
Top with seasoned goat cheese and enjoy!
