- ¾ cups almond flour
- 6 oz cheddar cheese, shredded
- 1 egg
- 4 oz mozzarella balls or cubed mozzarella
- 5 oz Swiss cheese, sliced
- 5-6 fresh basil leaves, chopped
- 2 tbsp fresh parsley, chopped
- 1 tsp oregano, fresh or dry
Preheat oven to 400F.
Crust: In a medium microwave safe bowl, combine shredded cheese and almond flour. Mix well to incorporate and microwave for 30 sec. Then add an egg to the almond mixture and mix well till dough forms. You can refrigerate the dough for 10 mins before working with it, but it is not necessary. Press the dough between 2 pieces of parchment paper. I use a rolling pin but palms will do just fine. Don't make the crust thinner than 1/4 inches. Place the crust on a baking sheet and send it into the oven. Don't forget to set a timer! It will take about 10 mins for the crust to bake but check every 3-4 mins just to make sure you don't burn it.
Topping: In a meantime, prepare the topping. In a medium bowl, coat mozzarella chunks with fresh herbs and set aside.
When the crust is done, remove it from the oven and place Swiss cheese slices on the crust to cover it. If there is a gap between the slices, it's ok. Then top with the mozzarella chunks and try to spread them evenly, too. Send the pizza back into the oven for another 2-3 minutes to melt the cheese. Ready!
