If you like blue cheese, this easy spinach salad recipe will become one of your favorites. It is on the heavier side which is perfect for those who likes filling lunches. Also, if you are looking for a fast healthy dinner recipe, this spinach salad with blue cheese dressing will be the way to go!


  • 4 oz baby Bella mushrooms, sliced
  • 4 oz blue cheese, divided
  • 3 handfuls spinach
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 1 tbsp avocado oil for searing


Preheat a medium pan with avocado oil on a medium heat. Add mushrooms and sear till they are soft and all liquid has evaporated, for about 3-5 mins. Remove from the pan and set aside.

Place olive oil, 2 oz blue cheese, and balsamic vinegar into a small bowl. Mix very well with a fork or a small whisk till the mixture looks like paste. You can add a little bit more oil if you want if the dressing is too thick.

Place spinach in a large bowl. Add the dressing and the mushrooms and mix well.Taste and adjust the seasoning. You might not need any salt as the cheese and the vinegar are salty. I usually add a pinch of salt and some black pepper.

Place the salad in a serving dish and crumble the rest of the blue cheese on top.
