INGREDIENTS

  • 7-8 medium potatoes, peeled and thinly sliced (you can use a mandoline)
  • 2 oz butter, melted
  • 1-2 garlic cloves, pressed
  • 1 onion, sliced
  • 4-6 oz mushrooms of your choice, quartered
  • Salt to taste
  • Herbs for garnish

INSTRUCTIONS

Preheat the oven to 400F.

Place potatoes in a large bowl. Add melted butter, garlic, and salt (about 1 tsp). Mix well. Line a large baking sheet with parchment paper. Arrange the potatoes on a baking sheet stacking them. Start from larger slices at the bottom and finish with smaller slices on top. It is normal to have 6-10 potato slices in one stack. Top your potato stacks with sliced onions. 

Arrange mushroom on the baking sheet in between the potatoes. Don’t put the mushrooms on top of the potatoes just yet. Bake for about 20-30 mins. The potatoes should become fork soft and golden brown on top. When done, remove from the oven and top with the mushrooms. Garnish with fresh herbs and serve!
