Preheat the oven to 350 F. Grease a loaf pan with a thin layer of coconut oil. Set aside.
Add white whole wheat flour, baking soda, cinnamon, nutmeg, raisins, and salt to a large mixing bowl. Stir the ingredients together and set aside.
Add mashed bananas, honey, coconut oil, vanilla, and eggs to a medium mixing bowl. Whisk together until the ingredients are smooth.
Pour wet ingredients over dry ingredients and fold them with a spatula. Make sure there are no clumps of flour and all ingredients are incorporated.
Pour the mixture into the greased loaf pan. Even out the batter on top. Place the banana bread into the oven and bake for 45-50 mins. Perform the toothpick test (the toothpick should come out clean).
When done, remove the bread from the oven and let sit for 10 mins before removing from the pan. Buon appetite!
