Easy Crust Pizza
with Spinach and Feta

When it comes to easy pizza recipes,  I always think about this easy crust pizza! It takes no time to make the delicious crust! And topping options are limitless!  Try this spinach and feta topping, it is one of my favorites! You can find more topping choices among my easy pizza recipes in "Lunch and Dinner" section. INGREDIENTS

  • Crust:
  • ¾ cups almond flour
  • 6 oz cheddar cheese, shredded
  • 1 egg
  • Topping:
  • 4 oz fresh spinach, divided
  • 6 oz feta cheese, divided
  • 1/2 cup plain yogurt
  • 1 garlic clove, pressed
  • Salt to taste
  • Avocado oil for searing

INSTRUCTIONS

Preheat oven to 400F.

Topping: Preheat a medium pan over medium heat with some avocado oil in it. Add 5 oz feta cheese and almost all spinach (leave a couple leaves for garnish).  Sear till the cheese melts and leaves become soft. Toss constantly. When done, set aside.

Place yogurt, garlic, and some salt into a medium bowl and mix well. Set aside.

Crust: Combine shredded cheese and almond flour. Mix well to incorporate and microwave for 30 sec. Add an egg and mix well till dough forms. You can refrigerate the dough for 10 mins before working with it, but it is not necessary. Press the dough between 2 pieces of parchment paper. I use rolling pin but palms will do just fine. Don't make the crust thinner than 1/4 in.  Send the crust into the oven and set a timer. It will take about 10 mins for the crust to bake but check every 3-4 mins just to make sure you don't burn it.

When the crust is done, remove it from the oven, spread the yogurt sauce on it evenly, then spread the feta and the spinach mixture. Garnish with the remaining feta cheese and the spinach leaves and serve!
