Easy Crust Pizza
with Blue Cheese and Mushrooms

When it comes to easy pizza recipes, I always think about this easy crust pizza! It takes no time to make the delicious crust! And topping options are limitless!  Try this blue cheese and mushrooms topping, it is amazing! You can find more topping choices among my easy pizza recipes in "Lunch and Dinner" section. INGREDIENTS

  • Crust:
  • ¾ cups almond flour
  • 6 oz cheddar cheese, shredded
  • 1 egg
  • Topping:
  • 1 small garlic clove (optional)
  • 1/2 cup Greek yogurt
  • 6 oz baby Bella mushrooms
  • 5 oz blue cheese, crumbled
  • avocado oil for searing
  • salt to taste

INSTRUCTIONS

Preheat oven to 400F.

Topping: Combine yogurt, garlic, and ½ tsp of salt in a small bowl. Mix well and set aside.

Heat a medium skillet over medium heat, add some avocado oil to coat the bottom. Then add mushrooms, salt them and sear them till they become golden. Set aside. 

Crust: Combine shredded cheese and almond flour. Mix well to incorporate and microwave for 30 sec. Add an egg and mix well till dough forms. You can refrigerate the dough for 10 mins before working with it, but it is not necessary. Press the dough between 2 pieces of parchment paper. I use rolling pin but palms will do just fine. Don't make the crust thinner than 1/4 in.  Bake for 8-10 mins till the crust is golden.

Pour the yogurt sauce on the crust and spread it evenly.  Then load the blue cheese and mushrooms. Turn off the oven and place the pizza back into the oven for a couple of minutes just to warm it up. Enjoy!
