They, probably, told you that you can't start your day with pizza... Well, it's official: YOU CAN! Here comes one of my favorite quick and easy breakfast recipes. Did I mention that these mini pizzas are actually quite healthy? Sounds unreal... but the only way to make sure is to try this easy and healthy breakfast recipe out!


  • Crust:
  • ¾ cups almond flour
  • 6 oz cheddar cheese, shredded
  • 1 egg
  • Topping (Here is what I used for this particular pizzas. You can top your pizza with absolutely anything you love to have for breakfast!):
  • 1 small garlic clove (optional)
  • 1/2 cup Greek yogurt
  • 4 eggs
  • 1/4 avocado
  • 8 cherry tomatoes
  • 1 oz fresh spinach
  • 4 oz baby Bella mushrooms 
  • 4 black olives
  • 2 oz feta cheese
  • salt to taste
  • avocado oil for searing


Preheat oven to 400F.

Topping: Combine yogurt, garlic, and ½ tsp of salt in a small bowl. Mix well and set aside.

Heat a medium skillet over medium heat, add some avocado oil to coat the bottom. Then add mushrooms, salt them and sear them till they become golden. Set aside. Add some more avocado oil to the pan and cook eggs. I prefer to cover them and leave the yolks runny, but it's up to you. Salt and set aside.

Crust: Combine shredded cheese and almond flour. Mix well to incorporate and microwave for 30 sec. Add an egg and mix well till dough forms. Divide the dough into 4 parts and press each of them between 2 pieces of parchment paper. You can put them all on one sheet pan, just leave a little bit of space in between. Don't make them thinner than 1/4 in.  Bake for 8-10 mins till the crusts are golden.

Pour the yogurt sauce on the crusts and spread it evenly.  You can load the rest of the ingredients in any order you prefer. I like the spinach at the bottom, then the eggs on top, and then I load the rest of the ingredients. Enjoy!
