- 2 ripe avocados, cut in half, pitted
- 4 eggs
- 2 green onions, chopped
- Dill or other herbs
- Salt and pepper
Preheat the oven (I set it on high broil).
Scoop a little bit of flesh from inside the avocados with a spoon to make more room for eggs. Not too much! Like a teaspoon from each half.
Place avocados in a baking dish. Salt, pepper the insides and season with herbs.
Transfer egg yolks into each avocado side with a spoon, then spoon in as much egg white as you can fit without spilling over.
Salt and pepper the eggs, garnish with green onions (optional).
Broil on high till eggs are cooked for about 5 mins. Check it from time to time to avoid overcooking.
Garnish with herbs of choice. Serve warm!
