Arugula and Avocado Salad

Looking for some easy salad recipes? We offer easy and nutritious! Very flavorful and unique, this salad can easily become one of your favorites. Packed with nutrients, it can be a healthy lunch option and even a filling dinner. By the way, the seasoned goat cheese is the true "cherry on top"!

INGREDIENTS


  • 2 handfuls arugula, 
  • 1 avocado, cut in 1/2 inch cubes
  • 1/4 medium white onion, thinly sliced
  • 2 eggs, boiled and cubed
  • 4 oz goat cheese
  • 2 tbsp Greek yogurt
  • 1 tbsp cold water
  • 1 small garlic clove, minced
  • 1 tbsp black pepper
  • 1 tbsp dry oregano
  • Salt to taste

INSTRUCTIONS

Divide goat cheese into small chunks but don't make them too big. They should yield around a teaspoon each or so. Form balls from the goat cheese chunks using palms of your hands and coat the balls in black pepper and oregano. Set aside.

Mix Greek yogurt with garlic, some salt, and water. Taste, adjust salt and set aside.

Place arugula in a large bowl. Add onions, avocado, and eggs to it. Then add the yogurt dressing and toss well. Adjust seasoning and top with the seasoned goat cheese. Enjoy!
